The quality of alfalfa hay is determined by its maturity at cutting, by environmental conditions before and during harvest, and by handling and storage processes after harvest. Because environmental conditions vary from year to year, factors other than a calendar date must be used as harvest criteria. This publication outlines information on predicting alfalfa quality.
